Watermelon, Arugula, and Feta Salad

This is a tangy and sweet salad perfect for summer. Plus, the colors are beautiful! Be sure to make right before serving so the arugula stays crisp.

Serves 4-6

Ingredients

6 cups chopped watermelon

2 tablespoons lemon juice

2 tablespoons lime juice

1 teaspoon red wine vinegar

1/8 teaspoon salt

1 1/2 cups arugula

1/2 cup crumbled feta

1 tablespoon mint

Mix the lemon juice, lime juice, vinegar, and salt together in a large bowl.

Add the watermelon, arugula, feta, and mint stirring gently to coat with the sauce.

Serve immediately.
