Halloween week is also a birthday week for our oldest daughter, Isabelle. She will be 13! So this week covers a lot in regards to meals! We host a big Halloween party for Trick or Treating and celebrate with a birthday meal a few days later! Many of these recipes are in my book, My Sweet Home Georgia Cookbook. ITALIAN SAUSAGE AND MUSHROOM SOUP

This recipe is a family favorite every Halloween! The heartiness of the mushrooms and sausage go great together in the fall.

FRENCH ONION SOUP

CHEESE GRITS

Breakfast for dinner is on the menu for the night after Halloween! Cheese grits are an absolute favorite of our family. Add a little bacon and eggs and dinner is served. The recipe is in My Sweet Home Georgia cookbook.

HONEY DIJON GRILLED HAM ‘N CHEESE

Walt would make these sandwiches for us when we first started dating. It was one of the first dishes he ever cooked for me and I loved it. The simplicity of a Grilled Ham and Cheese sandwich with a little honey and dijon mustard is delicious. Pair it with any of the soups from this week and what a great dinner!

And I like to use the thinly sliced Italian Bread from Publix's bakery. So, this recipe makes a large sandwich.

Makes 4 sandwiches

Ingredients

8 slices of Publix Italian White Bread (or your preferred sandwich bread)

16 teaspoons mayonnaise, divided

8 teaspoons dijon mustard, divided

8 teaspoons honey, divided

12 slices ham, sandwich thickness, divided

12 slices swiss cheese, sandwich thickness, divided

Directions

Assemble the sandwiches by first spreading 1 teaspoon of mayonnaise on each piece of bread. Then follow by spreading the mustard and honey on the bread.

Top 4 slices of bread with 3 pieces of ham on each. Make sure to cover the bread. Then top with 3 pieces of cheese covering the ham. Top with a piece of bread with the non mayo side facing up.

Place 1 teaspoon of mayo on the top of each sandwich.

In a skillet or on a griddle over medium heat, place the sandwiches mayo side down in the griddle to begin cooking.

While the mayo side of each sandwich is grilling, place 1 teaspoon of mayo on the last uncovered side. Grill on each side for 2-3 minutes until golden brown.

Serve immediately.

Y'all, today I cooked breakfast for Ford before he left for the State Shotgun competition at Forest City Gun Club. And let me tell you, over medium eggs have taken practice for me to perfect! And today I did it!

Over Medium Eggs

Makes one serving, multiply as needed

Ingredients

3 eggs, cracked

2 tablespoons ghee

1/2 teaspoon salt

1/4 teaspoon pepper

Directions

Melt the ghee in a large non stick skillet over medium heat.

Crack your eggs in a bowl one at a time and pour the eggs into the skillet one at a time.

Once all the eggs are in the skillet let them cook for 2 minutes or until the whites just begin to set.

Once set, flip the eggs over with a spatial and let cook for 2 more minutes.

Sprinkle with salt and pepper.

Pick up the eggs gently with a spatula and serve immediately.
