This week I am so excited to celebrate the beginning of the holiday season. We are going to kick it off with some pies, then move to brunch finger foods, followed by brownies for some students, and wrapping it up as we prepare for Thanksgiving food. Enjoy!

KEY LIME PIE

Our daughter, Isabelle, just turned 13. Key Lime Pie is her favorite for every birthday. This recipe is in my book, My Sweet Home Georgia Cookbook. Enjoy!

CAST IRON SKILLET APPLE PIE

I have been so curious about making an Apple Pie in a skillet. This is an excellent alternative to a classic American treat. Use an 8 inch cast iron skillet for this recipe. And of course, serve it a la mode, with a little scoop of vanilla ice cream. I prefer Granny Smith and Honey Crisp apples, but you use your favorite.

This pie is easy to put together. The butter and brown sugar make a wonderful caramel crust. Do leave ample time for it to cook and cool. Cooling allows the inside mixture to stay together a little more easily when served. You can make your own pie dough, of course. However, this is a busy season of life so I grabbed 2 Pilsbury’s pie dough crusts which are ready to roll out.

Makes 6-8 servings

Ingredients

1 1/2 pounds Granny Smith Apples, peeled, cored, and sliced into 1/3 inch slices

1 1/2 pounds Honey Crisp Apples, peeled, cored, and sliced into 1/3 inch slices

2 tablespoons lemon juice

1/2 cup sugar

2 teaspoons Apple Pie Spice (McCormick has a version)

1/2 cup butter

3/4 cup brown sugar

2 prepared pie dough crusts

Directions

Preheat oven to 350 degrees Farenheit.

Add apple slices to a large bowl. Pour lemon juice, sugar, and Apple Pie Spice over the top and mix well. Set aside.

In an 8 inch cast iron skillet, melt butter and sugar together over medium heat for 1-2 minutes. Remove from heat.

Once melted, place one pie crust on top of the melted butter and sugar. Carefully push the edges up the side being careful not to burn your fingers. Pour in the apples and press them in slightly to the bottom crust.

Add the second pie crust to the top and press the edges down into the insides of the skillet.

Cut 5 slits in the top of the crust to let the apples steam.

Cook for 1 hour and 15 minutes. The top will begin to brown and the apple mixture bubble when the pie is ready.

Let the pie cool for at least 45 minutes before serving. Serve with ice cream or eat alone.

DECADENT DARK CHOCOLATE BROWNIES

I made this brownie because I love dark chocolate. It is rich and luxurious. When I was little my favorite chocolate was the “Special Dark” from Hershey’s. I only ever saw them on Halloween and just loved the slightly sweet and slightly bitter taste! Divine! Serve this alone or with some ice cream. Recipe in My Sweet Home Georgia Cookbook! Y'all enjoy!
