Fresh Oven Roasted Vegetables

Serves 4

I find that mushrooms and broccoli require a little more olive oil than carrots or brussel sprouts which are more dense. A use as much pepper as you prefer. Alternatively you can sprinkle with a teaspoon of garlic powder for a different taste.

Also, keep in mind that different vegetables will cook at different rates. So keep a cloe watch if you are cooking different vegetables as come may be ready before others .

Ingredients

8 cups fresh vegetable roughly chopped

4-6 tablespoons of olive oil

1 teaspoon kosher salt

1/4 - 1/2 teaspoon black pepper

Directions

Preheat oven to 425 degrees F.

Place vegetables on a baking sheet.

Drizzle with olive oil. Sprinkle with salt and pepper.

Place in the oven for 20-30 mins until fork tender.

Serve immediately or store in air tight container in the refrigerator for up to 3 days
