Corned Beef and Cabbage

Corned Beef with Vegetables
Easiest and most festive meal. Serve with sauer kraut or mustard!
Serves 2-4
Ingredients
2 - 2.5 pounds corned beef
1/2 half head of cabbage
5 carrots halved
8 -10 small potatoes skin on
1/4 cup butter
1 teaspoon salt
Directions
Cook the corned beef per the instructions on bag. You will cover the corned beef with water and spices from the package in a large pot. Boil on a low boil, partially covered, for 1 hour per pound. You may need to add water as the cooking continues to keep the meat covered.
Once fully cooked add the vegetables to the pot with the salt and butter, and cook for 20 minutes on a low boil, partially covered until fork tender.
Serve immediately.
