Greek Style Chicken Pita
Serves 4-6
Ingredients
1.5-2 pounds chicken thighs
4-6 pieces pita bread
1 cup Cedar's tzatziki (or make you pwn), divided
1 cup English cucumber
1 cup tomato chopped
1 cup lettuce chopped
1 tablespoon red onion chopped
1/2 cup crumbled feta
Directions
Preheated oven to 400 degrees Fahrenheit
Marinate chicken thighs in 1/2 cup tzatziki sauce in plastic bag for 30 minutes in the refrigerator.
After marinating, place on cookie sheet in the oven for 30 minutes or until cooked through. Discard bag.
Once cooked, remove chicken thighs from oven, and slice into 1/4 inch to 1/2 pieces long ways.
Place all the ingredients in the pita pocket starting with 1 tablespoon of tzatziki spread on the inside of the bread.
Assemble lettuce, chicken, cucumbers, tomatoes, red onion, and tzatziki sauce in the pita and enjoy immediately
